Chocolate mint plants (Mentha x piperita 'Chocolate') are attractive, fragrant and easy to grow. As with most square-stemmed members of the mint family, growing chocolate mint can take over the area in which it is planted in the ground, readily and quickly making it ideal for ground cover or for containers.
Suggestions: Mint has a tendency to overpower the garden if not kept in check. Cut the bottom from a container, place the container in a hole in the garden, fill with soil and plant the mint inside the container.

Water plants regularly, especially those in pots, in periods of drought over summer. Chamomile can become leggy unless it is clipped regularly during the growing season to ensure growth remains compact, dense and bushy.

Sorrel is a leafy green vegetable grown for its pleasantly tart, lemony flavor. The plants have smooth to crinkled, arrow-shaped leaves that grow from a center. The plant will send up a tall flower stalk as the temperature warms, but it's best to remove this to promote leaf growth for a better harvest. Sorrel has multiple uses in the kitchen from soups to stews.

Lemon Balm is a bushy herb with light green leaves. This aptly named plant has a lemon scent and lemon-mint flavoured leaves. It is perfect for use with soups, meats, fish, sauces, and salads.
 Suggestions: For drying, harvest leaves in early morning. Dry quickly to retain flavour.Â

Scented flowers with bold spikes top silvery-green mounded plants. Sturdy, bushy variety grows low to the ground. Plant near the front of a border or in patio planters to enjoy their mild lavender fragrance

Sage provides a relaxing scent and flavourful leaves with a bluish-tinge. This herb can be used for cooking, drying and scent. It also makes a delicious tea and can be dried out for uses such as burning and aroma.Â
Suggestion: Pick leaves sparingly the first season and replace entire plant after 3 seasons as plant becomes woody soon after.Â

Highly aromatic scent and spicy flavor. White flowers in Summer.
Plant oregano in full sun, water when dry and harvest at 4 or 5 in. (10 to 13 cm) tall. It requires little maintenance and makes an excellent edging plant or ground covering even in dry garden spots.
Suggestions:Â For drying, harvest before flowering. Encourage foliage by removing flowers as they appear. Oregano will thrive as a potted plant.
