Herbs
Italian basil has extremely tender, fragrant, extra-large, dark green leaves and is superb for pesto. Start early indoors or outside after all danger of frost. Fragrant plants are great for herb gardens or adding scent to mixed combinations.
Suggestions: Dry quickly, after harvest, to retain flavour for teas and cooking uses. Water Heavy.

This mint, rather than spearmint, gives the authentic mojito taste. Mojito Mint has a much milder flavour with hints of citrus whereas spearmint is much stronger (think breath mints or chewing gum). Mojito Mint has large leaves which make it great for muddling.
Suggestions: Mint has a tendency to overpower the garden if not kept in check. Cut the bottom from a container, place the container in a hole in the garden, fill with soil and plant the mint inside the container.

Dill is very easy to grow and a must for all herb gardens. The tall plants are topped with clusters of tiny yellow flowers on the tips of an array of central stems. Seeds and leaves are perfect for use as a flavouring for fish, stews, vegetables, poultry, pickles, and salads.

Lots of flowers in spring and summer attract butterflies and honeybees. Sturdy, bushy variety grows low to the ground. Plant near the front of a border or in patio planters to enjoy their mild lavender fragrance

Parlsey is best used for cooking as it withstands heat and retains its flavor.
Curled parsley lightly easier to grow in a garden, has similar taste to Italian however it is more difficult to cook with due to the compact leaves. Most commonly found as a garnish.

Sage provides a relaxing scent and flavourful leaves with a bluish-tinge. This herb can be used for cooking, drying and scent. It also makes a delicious tea and can be dried out for uses such as burning and aroma.
Suggestion: Pick leaves sparingly the first season and replace entire plant after 3 seasons as plant becomes woody soon after.

Cilantro, or Coriander, is also known as Chinese Parsley. Popular for its spicy flavour, it is a mainstay of many Chinese and Latin American dishes. Use as a flavouring in curries, chilli sauces, breads, sauces and pickles. This variety is quick to flower.
Suggestions: Chopped cilantro can be added to sour cream and used to top chilli, soups, and stews!

Oregano is widely used as a culinary spice, most often as a dried herb.
Plant oregano in full sun, water when dry and harvest at 4 or 5 in. (10 to 13 cm) tall. It requires little maintenance and makes an excellent edging plant or ground covering even in dry garden spots.
Suggestions: For drying, harvest before flowering. Encourage foliage by removing flowers as they appear. Oregano will thrive as a potted plant.

This versatile herb can be used in baking, vegetable and meat dishes, sauces, preserves, jellies and beverages. A great choice for home gardens, and hardy to Zone 3. Plants can be invasive if allowed to spread freely and should be planted in a container. Water generously in dry weather.
Suggestions: Plant can be invasive and should be restrained from moving into adjacent paths and lawns. Cut out bottom of a container. Dig hole in garden and insert container. Plant the Spearmint in the container.

Catnip is a type of mint that grows into an attractive plant. You can begin harvesting catnip when it’s about 12 in. (30 cm) tall and continue all Summer. Try drying catnip to fill your cat’s toys as a special treat.

Cymbopogon flexuosus. Lemongrass is a tropical plant from the grass family (Poaceae) that will grow well in temperate regions if given the right conditions. At the end of summer move container plants into a frost free environment with good air circulation. Reduce watering to almost none, making the soil barely moist once a week.
When using Lemongrass in the kitchen, remove any loose, outer layers. Either use whole pieces, crushed slightly with a pestle or under the back of your cleaver, or slice sections very thinly in cross section. This will help break up the strong fibres of the grass stalks.
